Sorry I haven’t posted in a while but I just finished my fall semester finals and I am back home in Des Moines with my family for the rest of break.
To celebrate the end of the semester, instead of going to a popular Mexican restaurant on campus to drink margaritas and eat, I decided to save money and do something special for my roommates.
My sister loves to make brown sugar bacon wrapped smokies for our family dinner parties so I thought I would give it a try because they are incredible! Even though it gets messy to make, it’s simple to make and really impresses everyone when they’re done. These would work as yummy hors d’ oeuvres for a holiday dinner party or appetizers for watching a sports game.
Ingredients: One package of bacon, 13-16 oz. of little beef smokies, and a cup of brown sugar. Preheat your oven to 375 degrees.
Cut your bacon into thirds.
Put the cup of brown sugar in a mixing bowl (I added about a 3/4 tsp. of cayenne pepper powder to add a little kick). Cover the strips of the bacon in the brown sugar mixture.
Wrap one of the bacon strips around a smokie sausage and secure it with a toothpick.
Place bacon wrapped smokies in oven-safe dish and place in oven for 20-25 minutes. Then turn on your broiler for an additional 5-7 minutes (depending on how crisp you want your bacon).
To go with these, we made our own margaritas on the rocks with some store-bought tequila and margarita mix (with my DIY glitter margarita glasses). Also, it’s not in this picture but I also mixed in some Bacardi Bahama Mama into my margarita and it was 5x better and stronger… So much fun celebrating the end of another semester with the roomies without spending very much money and not having to leave our apartment, nothing better. Miss all my Iowa City lovers already but it’s good to be home and I can’t wait to see all of my friends from home for a whole month. Ah!
